Broccoli cutlets
If you decide to become a vegetarian or arrange a fasting day without meat, I advise you to cook delicious broccoli vegetable patties. This dish is suitable for menus of lacto-ovo-vegetarians and ovo-vegetarians, as it contains chicken eggs. Broccoli patties can be fried year-round. They are prepared from frozen cabbage even faster than from fresh cabbage, because cabbage is usually blanched before freezing. Another recipe feature is the lack of wheat flour. The thickener in the vegetable test is oat bran - a dietary product rich in fiber, for which he is very loved by nutritionists.

Appetizing cutlets from a miracle cabbage, which contains a lot of useful trace elements, boasts simple cooking and a light taste. I think that this recipe will reconcile them with an unloved vegetable.

Broccoli Cutlet Ingredients
- 300 g broccoli;
- 1 chicken egg;
- 50 g of oat bran;
- 30 g leek;
- 10 ml of lemon juice;
- 20 g semolina;
- vegetable oil for frying, salt.
The method of preparation of broccoli cutlets
We sort the frozen or fresh broccoli into inflorescences. Put on a wire rack or in a colander. Steam for about 10 minutes - the cabbage should become soft.

Turn the finished cabbage into mashed potatoes. With a blender you can achieve a uniform creamy consistency, but I like it when small cuts of cabbage are caught in cutlets, so I use a normal potato crusher.

To the cooled chopped cabbage we add small table salt to taste and break a large chicken egg. Mix the ingredients.
On fast days, instead of an egg, add a few tablespoons of plain or soy milk to the minced meat. Milk protein can also stick together ingredients.

Pour oat bran into a bowl, mix immediately. Oat bran has a good property - they absorb moisture like a sponge, but this takes some time (5-6 minutes).

We shred the thin part of the leek stem with a thin straw. Squeeze about a tablespoon of lemon juice. Add chopped onion and lemon juice in a bowl, carefully mix the minced meat. Leek can be replaced with green onions, but it is better to pre-fry until transparent.

Pour semolina onto a plate. With wet hands we sculpt small round minced meat patties, roll them in semolina on both sides.

Heat refined vegetable oil for frying in a pan. Fry the patties for 2-3 minutes on each side until golden brown. Then we put everything together in a pan, make a small fire, cover with a lid and bring to readiness for another 5 minutes.

We serve broccoli cutlets to the table with sour cream or sauce. Cutlets are tender, soft, very tasty and healthy. Enjoy your meal!
